Continue from Popcorn in Our Palms

As we walked back from the park, there was this one tough looking guy walking passed us and I could see him staring. I got scared so I switched to walk on the other side of Patrick instead and I guess he noticed I was scared."You don't have to be afraid, Candice. You can trust me with your life" he said,out of nowhere. I looked at him as he started to say "people here might look scary but they speak their mind." And that got me thinking. Hard. There are so many times I judged people by appearances and later on,they turned out to be the nicest people I have ever met. And so as some people, their appearances might be a little frightened but once they started to smile and talk to me, I felt like I could just get into their mind. It's like they just opened the door and welcome me into their minds. So I guess looks can be deceiving sometimes like they always say.

As we walked further, there was one strange guy ahead of us and again, I could see him staring. But it's not the normal kind of staring. It was confused, sad and worried kind of staring. Before he walked pass by, he finally said something to Patrick "You have to take a good care of her, okay? And he looked real serious about what he said. The short conversation went on between them which I couldn't understand. When I finally got to ask Patrick what they were talking about he said that guy told him to take a good care of me and that he had lost his love one before. We didn't know what had happened to him. I kept wondering about it again and again. Maybe because the look on his face was so serious that it made a big deal out of what he has said. I wonder what he did to her. Was he a nice boyfriend? Was it him who break her heart or was it her? Was he there for her when she needed him? Did he forget to hold her hand as tight as he could and tell her how much he cares about here? Maybe he had all the pieces but he just couldn't put them all together. Maybe It was dying but he was just watched it die. The feeling of wondering gave me this weirdest sensation whenever I picture of his eyes. How serious he

was. But as much as I want to find out all the answers, I still think that not knowing is the charming part about it. And If I ever find out the answers and their story turns out to be worse than I thought, then I don't know if I can handle that-Candice-

Caramelized Onion and Spinach Quiche

For the pie crust :

1 cup butter

2 1/2 cup flour

1 tbsp sugar

1 tsp salt

For the filling :

Any kind of onion you prefer

Spinach

A dollop of butter

9 eggs

1/4 cup of whole milk

1 1/2 of sharp cheddar, grated

Smoked ham, cut into little cubes

Black pepper

Salt

-Cut the butter into cubes and put it in the fridge while you work for the dry ingredient. In a medium bowl, combine flour, salt and sugar together. Put the butter back into the bowl. Mix it into the flour with your hands until the mixture resembles coarse meal. Beat an egg and mix with a little of cold water. Add the liquid and mix until the dough is moistened. Turn the dough out onto lightly floured surface and gather it into a ball. Knead the dough 2 or 3 times, just until it comes together. Divide in half and wrap each one in plastic and refrigerate until chilled, at least 1 hour.

-Cut up the onion and prepare the spinach. In a frying pan, melt a dollop of butter and stir in the onions. Caramelize the onions and when they turn golden and brown color, stir in the spinach and cook for a few more minutes or until the spinach cooks down. Leave it to cool slightly. In another bowl, break 9 eggs and beat it well. Pour in the milk and stir until well combined. Then, add ham , cheese and spinach and onion mixture.

-Preheat the oven at 350'F. Take the pie dough out of the fridge. Roll the dough on lightly floured surface, and transfer it to the pie plate. Pour the egg mixture over the pie crust and top with more cheese.(Come on, more! It's quiche!)

-Pop it in the oven for 35-45 minutes. Keep an eye on this baby! Believe me you don't want to let any of these good stuff go to waste.

(We secretly called this “Failed Pie Crust Quiche”, cause the butter wasn't cold enough when we made the crust. The dough turned out to be slightly wet than we expected. I was so worried it wouldn't turn out like I had pictured. But you know what? This failed crust we made turned out to be the best failure I have ever made in my cooking experience! The crust was buttery and flaky.

It’s everything you can ask for a pie crust. Our friends who were there to witness this quiche love it. They were happy. We were happy. It was such a lovely day after all)
