Presence of Pies

When the pie was opened The bird began to sing Wasn't that a dainty dish To set before the king?
The king was in the counting-house Counting out his money, The queen was in the parlor Eating bread and honey. The smell wafted through the house. I took another glance on these lovely pies sitting still on the counter and smiled. I must had been crazy but I thought they smiled back at me everytime I took a sneak peek at them. There's something unexplainable about the presence of pies. They transformed your whole house and mind to this cozy little space in the universe where no one else but you knew it exists. In my opinion, a house became a HOUSE when i baked this pie. Ughhh I wish it was 4th of July every month! - Candice.


We were asked to be in charged of desserts for the 4th of july party hosted by our friends. It was great to see new and old faces at the party enjoyed having conversations, playing games, singing both US and Thai national anthems, and cherishing food together. And ain't noboday cared if they were going to gain 5 pounds the next day after all the food we'd had. It's 4th of July people! That night we had ribs, corn breads, apple pies, and US cookies! AND HERE'S THE RECIPE FOR THE APPLE PIE!






4th of July APPLE PIEEEEE!!!
what you need :
- 1 batch of pie dough
- 3 pounds Granny Smith apples (about 5 large), peeled, cored, and thinly sliced
- 3 Fuji apples. Do the same thing you did for Granny Smith apples.
- 2 tablespoons (¼ stick) unsalted butter
- ¼ cup granulated sugar
- ¼ cup (packed) light brown sugar
- 1 tablespoon fresh lemon juice
- 2 teaspoons ground cinnamon
- ½ teaspoon kosher salt
- ¼ teaspoon freshly grated nutmeg
- 2 tablespoons all-purpose flour.
- eggwash
- white sugar for sprinkle on top.
-On the medium heat, add the butter, sugar, brown sugar, cinnamon, and nutmeg all together and let everything melt down.
-Meanwhile, prep your apple in a big bowl. Add lemon juice and use your hands to toss the apple pieces with the lemon juice. Add the flour and mix well again. When everything in the pot melts down, add the liquid mixture to the apple bowl. Comebine well and tranfer this filling in the container and leave in the fridge overnight.
-I know it's a longggg time, but you want to really let this sugar mixture to soak into the apples and draw the juice out! So this recipe is great to prep a day ahead.
-The next day,split the pie dough into two balls. Roll them out and refridgerate them while you are working on the apple filling. Then, drain the liquid out from the apple filling onto the pot and reduce the liquid half way down.
This will really give your apple pie a really intense flavor of sweetness and spices. Take the dough out and it's absolutely up to your desire to either cut the top part into laces or just cover the pie with the whole pie dough and just beautifully pinch the sides.
-Just remember that once you lay the bottom pie dough down, you need to put a bunch of filling in and make it as tall as you could cause that is just gonna give you a distinct look for your pie, making it look even more honest.
-Brush the top of the pie dough with eggwash and also top with sugar to give extra crush everyone would love. Bake at 350'F preheated oven for 45 to 50 min or until the top is golden and brown. And that's it! Now let you guests dig in!
