Hangover (From Mexican Week!)


As soon as I stepped my feet out of Texas three years ago, never once did I eat Mexican food more than one time a week. Every time we passed by the Mexican place, I always so wanted it, but due to the economic problem these days, buying one meal there would be enough money for me to survive through out the week at the university's cafeteria.

BUT NOW....!!!.... that I know how to make it myself and actually found out that they taste as great as store bought so why the heck should I starve myself from this heavenly Mexican food!!? The first time I made it was probably in June where I made three bathes of doughs for the ocho de malcho. It was like 50 tortillas but there were like hundreds of people showing up, so these bad boys had disappear in a wink of an eye.

The second time I made it was last Tuesday and it was one of the fond moment to be proven that food could really bring people to the table and just enjoy each other company! I remember all my peers grabbing food at the table and 15 of us all sat down together at the living room, talking about food, and watching movie. I looked around and saw how happy I was, how everybody also was.

On Thursday, I welcomed Teoy to MI CASA! And we decided to make a taco lunch with a little twist of Lebanese food in it too. I accidentally ran out of milk so I decided to use this coconut milk instead and OMG!! The tortillas came out even BETTER! You are not going to believe how nice the smell was and how soft they became! And we made hummus, fish, and clams to go with it! Just the thought made me salivating already!

-Saturday's morning, Katy and I made breakfast burritos.

-On Saturday's late morning (again), Sophie and us two were probably a little too into the chipotle topic, and we couldn't get the thought of that big burritos and lime rice easily knowing that we are now can make tortillas from scratch so we divided to follow our desires and did another Mexican night where we literally spent the whole afternoon cooking this CARNITAS, Shrimps, THREE BATCHES of TORTILLAS, MANGO SALSA, and LIME RICE.

I had to admit I was a bit tired of this dish but after I took a big bite of the overly stuffed taco into my mouth, I realized how badi actually wanted it. Tang also made flourless chocolate cake and my night was just completed.

Having taco 4 times in a roll would definitely be sth I'd do more often - Candice
