What!? We had temporarily moved the island. The volcano of food erupted that day and somehow my stomach could handle all those orangy, crunchy, and good-for-your-tummy upside down cake with macademia nuts and soft serve! OMGGGGGGGG Why Am I Eating So Good!!

We didn't pretend. We weren't fake. But we allowed ourselves to be what we were not. For a day. And when everyone's understanding is the same, that was when the not knowing happened, and we were ready to absorb new things, new culture together. I love the way everybody in the room were in on everything Moriah came up with. This is why I love the heck out of these folks!! They were able to bring out the craziness in me and we are always up for anything without overthinking about it. Even the boys moved along when we were given the hawaiian dance lesson. We accepted who we are and we appreciate the differences we had as a human. I'm so in LOVE with US -Candice.
Pineapple Upside Down Cake Adapted from Entertaingint with Beth's Tea Cake
2 cups fresh pineapple, cut into big chunks. Or youcan use the can one. 4 tbsp butter, room temperature. 1/4 cup brown sugar
In a round cake pan, put the butter and brown suagr in and mix to combine then pop it in the preheated oven at 350'F for 5 minutes. Give it another stir once you take it out of the oven. Then spread the mixture around the pan surface. Make sure they cover all the area. Now, put the pinapples down one at a time. Do it however you like and when every corners of the pan get covered with pineapples, you can set it aside while you work for the cake batter.
¾ cup melted unsalted butter ¼ cup vegetable oil 1 cup sugar 2 eggs 1 tsp rum extract ¼ cup water 1 ½ cups flour 2 tsp baking powder 1 tsp salt
In a bowl, combine butter, oil, sugar, eggs, rum extract, and water. Mix well to combine. Now let's move on to the dry ingredients. Mix flour, baking powder, and salt together. Then pour the dry mixture to the wet half at a time.Fold the mixture gently. Do not overmix as it will result as a tough ake later on. Make sure there's no lump. When the batter is ready, pour it on top of the pineapple mixture in the cake pan and bake for 25-30 minutes or until the toothpick comes out clean. Wait for the cake to cool down for 5 minutes before you get it out. Once it has cool down a bit, serve warm with vanilla ice cream, and maccademia nuts. Believe me, It's hecka YUMMY!!!!
