A package from home.


Last week,when Candice and I went back home for a few days. My mom were so excited. The week before we went back, she literally picked mangoes from every mango trees we had in our garden, so that the mangoes would ripe just in time when we got home. There were 3 big boxes of mango lying in the kitchen when we walked into the house. Our eyes were wide-open, and we couldn't thank mom enough for her big treats. But the question was 'How are we gonna eat these fully ripped mangoes in 5 days?'. It would be such a waste to throw them away, so we decided to pack them up in the fridge, ate them 3 or 4 at a time and then five days afterward, Candice and I were done with mangoes. Now that we're back in Bangkok. My mom had just sent us the package from home. In the box, there were Jackfruits, mangoes, and dried bananas. The Jackfruits and dried bananas, those, we're happy about, but the mangoes? No. Had enough of those already. So, I've been trying to come up with new recipes to use up all the mangoes, and find ways to jazz them up a little. And while I was watching Bon Appetite's video on 'How to make a fluffier, and tastier biscuits', I was like 'This is it. Vegan biscuit with my mangoes!' So, I blended oats to make oat flours, added in baking powder, pinch of salts, little bit of cinnamon, a splash of vinegar, chunky dried bananas, and Candice's Wild Prune water. The biscuit turned out so good. It was dense but not too dense. Crunchy on the top, but quite soft in the middle. And the dried bananas was what made the biscuit tasted sweet and chewy when biting into. The combinations of flavors and textures came together perfectly,but if you ask what would I change in this recipe, my answer would be to put lesser dried bananas, and a little more salts. That, if you are like me that tends to enjoy food more on the salty side than the sweet one.

Vegan biscuits. Dry Ingredients

- 1 cup of oat flours. - 1 tsp of baking powder - a pinch of salts - 2 tbsp of chia seeds - 1/4 cup of chopped dried bananas Wet Ingredients - 1/4 cup of wild prune water ( in this case, you can use 1/4 of yogurt instead.) - 1 tbsp of vinegar. Mix them all really well together. Check if the dough's texture is too wet. If it is, add a little flours. Lastly, shape the dough really well into biscuit shape, and bake at 180 C ํ for about 20 minutes or more for a crispier crust.
